TURKEY WEIGHT GUIDELINES & APPROXIMATE SERVINGS (based on approx. 250g serving):

4 – 5kg = 9 – 11 servings

5 – 6kg = 11 – 13 servings

6 – 7kg = 13 – 15 servings

7 – 8kg = 15 -17 servings

  1. Pre heat your oven to 180C, gas mark 4.
  2. Pat the turkey dry with kitchen paper, smother with 50-100g of butter and season generously with salt and pepper.
  3. Place in a deep roasting tin, breast-side up, do the first roast with the foil on.
  4. Remove the foil and roast for the remaining time.
  5. Rest on the side loosely covered, this allows the juices to be re-absorbed (cover too tightly and you’ll lose the crispness).
  6. Carve and enjoy!

 

To check your turkey is perfectly cooked, insert a meat thermometer into the thickest part of the bird and hold for 30 seconds, it should be at least 75°C.

Alternatively insert a skewer into the thickest part of the leg; if the juices do not run clear return to the oven for 10-15 minutes, then test again.
