4 – 5kg = 9 – 11 servings
5 – 6kg = 11 – 13 servings
6 – 7kg = 13 – 15 servings
7 – 8kg = 15 -17 servings

- Pre heat your oven to 180C, gas mark 4.
- Pat the turkey dry with kitchen paper, smother with 50-100g of butter and season generously with salt and pepper.
- Place in a deep roasting tin, breast-side up, do the first roast with the foil on.
- Remove the foil and roast for the remaining time.
- Rest on the side loosely covered, this allows the juices to be re-absorbed (cover too tightly and you’ll lose the crispness).
- Carve and enjoy!
To check your turkey is perfectly cooked, insert a meat thermometer into the thickest part of the bird and hold for 30 seconds, it should be at least 75°C.
Alternatively insert a skewer into the thickest part of the leg; if the juices do not run clear return to the oven for 10-15 minutes, then test again.
