This classic handmade Beef Wellington is generously made for two. Made with the finest Roves Beef fillet covered in Tracklements English mustard, Roves Farm ham, a mushroom and thyme duxelle and wrapped in buttery puff pastry, ready for your oven.

Ingredients

Non gluten free option: Beef Fillet, duxelle: portobello mushrooms, shallots, unsalted butter (MILK), garlic, sea salt, fresh thyme, cracked black pepper, pastry: Wheat Flour, Margarine (Vegetable Oils and Fats (Palm, Rapeseed), Water, Emulsifier (Mono- and Diglycerides of Fatty Acids), Salt, Acidity Regulator (Citric Acid), Colour (Beta Carotene)), Water, Alcohol, Salt, Lemon Juice Concentrate, Deactivated Yeast, Natural Flavouring Mustard (Mustard Flour, Water, Cider Vinegar, Sea Salt, Concentrated Lemon Juice, Raw Cane Sugar, Turmeric.) Egg, (EGG).

Gluten free puff pastry (Water, Corn Starch, Vegetable Oils and Fats (Palm, Rapeseed), Rice Flour, Pea Flour, Vegetable Fiber (Potatoes, Rice Pea, Plantain, Psyllium), Thickener (Xanthan Gum, Hydroxypropyl Methylcellulose), Alcohol, Salt, Buckwheat Flour, Natural Flavouring, Flour Treatment Agent (Transglutaminase),Acidity Regulator (Citric Acid)) Egg, (EGG).

Cooking instructions:

Pre-heat oven to 200 degrees centigrade. Take the wellington out of the foil tray, remove the pads underneath, place onto an oven tray and rest for 20 mins.

Remove the lid and place in the centre of the oven and cook for: –

  • 35 mins (medium-rare)
  • 45 mins (medium)
  • 55 mins (well-done)

Rest the wellington for 10 minutes once removed from the oven, slice, serve & enjoy.

To check how cooked the beef is, cut the wellington in half and if you would like it to cook more simply push back together and place back in the oven at 5-minute intervals until to your liking.
