For WELL DONE add an extra 10 mins for every 500g
- Preheat the oven to 220ºC, gas mark 7.
- Before cooking, dry the outside of the Beef and season heavily with salt and pepper.
- Heat a skillet or frying pan over a medium heat and sear the beef (very lightly brown the outside of the meat).
- Place the meat into a roasting tin and cook for 20 minutes, then reduce the heat to 190ºC and cook for the remaining time.
- Remove from the oven and put in a warm place and allow to rest for 15 mins before carving.
