from our Sussex & Highland Cattle

Our beef comes from animals born and reared on the farm. Our cattle graze the pasture in summer, and are fed on home grown hay and silage in winter. Slow grown to develop natural muscles they produce beautifully marbled, and flavoursome meat. The fore quarters of meat are hung for a minimum of twenty one days, and the prime cuts and joints are hung for a minimum of twenty eight days to tenderise and mature the flavour further.

The Highland breed originates from the Scottish Highlands. They are therefore extremely hardy and able to graze outdoors all year, if ground conditions are suitable. Highlands have a double-coat, which means they keep warm without having to put on lots of extra fat. Hence they produce meat which is very lean.

Sussex Cattle are a tradition British beef breed that are renowned for producing quality meat, fine in texture, well marbled and traditional in flavour. The qualities of Sussex beef make it very popular with butchers. Docile in temperament, with a beautiful deep red coat, Sussex cattle are easy to handle and manage. They thrive on grassland and require very little extra feed.
